Graviera is one of the most famous cheeses of Crete, it is a mature cheese and one of three Cretan cheeses with a protected designation of origin PDO. It is made from fresh pasteurized goat and sheep milk (up to 10% goat milk) in a traditional way. The milk comes from sheep that graze freely on mountain pastures. It matures for at least three months in suitable conditions of temperature and humidity. The maturation time is important to emphasize the taste and aroma, and it is also advisable to eat it when the cheese itself is at room temperature. The cheese has a yellow color, an excellent semi-sweet taste and a rich aroma. Graviera is one of the richest calcium-rich foods. It will decorate any cheese plate, it is wonderful in pasta or in a salad. But mainly in Crete it is eaten with honey or with any of your favorite chutneys. Since 1952 and for 3 generations, the STEIAKAKI family has been producing excellent products in a traditional way, without preservatives, with modern equipment. Their raw material is local milk, collected daily in the Messara area of ​​Heraklion Prefecture, Crete. The excellent raw material, i.e. the milk used, determines their stable and excellent quality of products, as it comes from animals grazing freely in the mountainous and semi-mountainous areas of Crete.
