Halloumi is the famous traditional white cheese of Cyprus which has been produced on the island for centuries. The name is derived from the Greek word “almi” which means salty. It is an unripen, brined cheese made from a mixture of goat’s and sheep’s milk. Halloumi is a cheese of endless variety, and whatever you decide to do with it, the shape and texture are always retained. One can enjoy this cheese in any form: ideal for grilling, frying, barbecuing and grating. Great in a salad or when accompanying cold fruits especially cold watermelon.
